U.S. Farm Raised Catfish teams perfectly with almost every flavoring!
Yield: 2 servings
| 2 | U.S. Farm-Raised Catfish fillets (about 6 ounces each) | ||
|  | |||
| 2 | tablespoons | olive oil | |
|  | |||
| 1 | medium-sized green bell pepper, chopped | ||
|  | |||
| 1 | medium-sized onion, chopped | ||
|  | |||
| 2 | garlic cloves, chopped | ||
|  | |||
| 1 | cup | chicken broth | |
|  | |||
| 1 | can | (14.5 oz.) diced tomatoes | |
|  | |||
| 1/2 | teaspoon | dried oregano | |
|  | |||
| 1/2 | teaspoon | dried basil | |
|  | |||
| 1/2 | teaspoon | black pepper | |
|  | |||
1.  Heat the olive oil in a large skillet over medium heat.  Add the green pepper, onion and garlic, and saute for 2 to 3 minutes, or until the vegetables become translucent.  
2.  Add the chicken broth, tomatoes, oregano, basil and black pepper;  bring to a boil and cook for 2 minutes.  
3.  Reduce the heat to medium-low.  Place the catfish fillets over the sauce, cover and simmer for 7 to 9 minutes, or until the fish flakes easily with a fork.  
Serving Tip: This has so  much flavorful sauce, you may want to serve it over cooked rice.
